Without the combination of lush pastures, plentiful spring water,  rolling hills and cool mists we are blessed with, our cows wouldn’t produce such rich milk and we wouldn’t be able to slowly mature our cheese so they develop complexity and character.”

Their flagship cheese, handcrafted traditional cheddar made in made the same way as it was 100 years ago. Westcombe Cheddar has a deep complex flavour with a mellow lactic tang and long notes of citrus, hazelnut and caramel. The texture is structured and firm, with a smooth breakdown that keeps the flavours lingering on your palate.

Duckett’s Aged Caerphilly 250g

Despite its Welsh origins, Caerphilly has been made by West Country cheese makers since the late 1800s, originally as a way to generate short- term cash while their slow-ageing traditional cheddars matured.

Duckett’s Aged Caerphilly has a lovely fresh taste with a clean lactic tang, followed by bright flavours of fresh grass, raw mushroom and citrus. Firm, but soft and springy, it has a lightness and delicacy that is the perfect foil to the richness of Westcombe Cheddar.

Westcombe Red 250 g

RAW COWS' MILK   | HOLSTEIN-FRIESIAN COWS   | AGED 5 MONTHS

Falling somewhere between the complex Traditional Cheddar and more delicate Aged Caerphilly, Westcombe Red is a mellow but characterful semi-hard cheese with a smooth somewhat crumbly texture. Made in traditional cloth-bound ten kilo wheels and aged for around five months, Westcombe Red boasts a good depth of flavour with lasting notes of roasted nu and fresh summer grass.
